Irish strawberry season is here, and this strawberry, feta and cucumber salad is a simple way to make the most of it. Sweet Irish strawberries pair perfectly with crisp cucumber, creamy feta, toasted pine nuts and fresh butterhead lettuce for a colourful seasonal salad. Finished with a light balsamic dressing, it's a quick and easy side dish that's perfect for summer lunches, barbecues and making the most of fresh Irish produce.
Ingredients

1 head butterhead lettuce

½ cucumber, sliced

4-5 strawberries, sliced

60g feta cheese, crumbled

20g toasted pine nuts

½ scallion, finely sliced
Dressing

2 tbsp olive oil

1½ tbsp balsamic vinegar

½ tsp honey

Salt and pepper, to taste
Method

To make the dressing, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.

Remove the root from the butterhead lettuce, then wash and dry the leaves.

Arrange the lettuce on a serving platter.

Scatter over the cucumber, strawberries, spring onion, feta, and toasted pine nuts.
