If you’re looking for a different way to use Brussels sprouts, this is a lovely one to try.
Lightly charred and finished with a miso maple glaze, they’re balanced with a touch of sweetness and a squeeze of lemon.
A great side for roasts, fish, or anything you’re putting on the table.
Ingredients
300g Brussels sprouts
1 tbsp butter
3 tsp miso paste
1 tbsp maple syrup
Juice of ½ small lemon
Salt & pepper
Optional: sesame seeds, to serve
Method
Bring a large pot of salted water to the boil. Cut the Brussels sprouts in half and blanch for 2 minutes. Drain and leave to steam dry for 8–10 minutes.
Heat a large frying pan with a little oil. Add the sprouts and cook until lightly charred, tossing regularly.
Add the butter and let it melt, then stir through the miso paste. Add the maple syrup, toss everything together, and finish with a squeeze of lemon juice.
Season with salt and pepper, and serve topped with sesame seeds if you like.
