Irish Victoria Plum Compote 🍑

Make the most of sweet Irish Victoria plums with this simple plum compote. 🍑 Gently cooked with maple syrup, cinnamon and a squeeze of lemon, it’s perfect spooned over yoghurt for lunchboxes, overnight oats or pancakes or served warm with a scoop of ice cream.

Ingredients

  • 500g Irish Victoria plums

  • ¼ cup maple syrup

  • ½ tsp cinnamon

  • Juice of ½ small lemon

  • 200ml boiling water

Method

Cut the plums in half and remove the stones, then cut each half into quarters.

Add the plums to a pot with the cinnamon, maple syrup, lemon juice and boiling water. Gently bring to the boil, then reduce the heat to a simmer.

Cook for 12–13 minutes, stirring often, until the plums have softened and started to break down.

Set aside to cool, the compote will thicken slightly as it cools.

Store in an airtight container in the fridge for up to 3 days.

Spoon over yoghurt, pancakes or overnight oats, or enjoy with ice cream. 🍑
