Ingredients
- 1 large wrap
- 3 eggs
- 2 heaped tbsp cottage cheese
- 1 Large tomato or two small tomatoes, diced
- 2 mushrooms, sliced
- 1 green onion (scallion), finely sliced
- ½ cup kale, chopped
- ½ cup grated cheese of your choice (or a mix of cheeses, such as cheddar and feta)
- Salt and freshly ground black pepper
- A little oil, for greasing the dish
Method
- Preheat the oven to 160°C and lightly grease a round ovenproof baking dish with a little oil.
- Press the wrap into the dish, allowing it to come up the sides to form a crust.
- Crack the eggs directly into the wrap, add the cottage cheese, season with salt and pepper, and whisk together with a fork until combined.
- Scatter over the tomato, mushrooms, green onion and kale, then sprinkle with the grated cheese.
- Gently press the vegetables into the egg mixture so they are evenly covered.
- Bake for 15–20 minutes, or until the egg is set and the top is golden.
- Leave to cool for a few minutes before slicing.
Serve warm or cold with a fresh green salad. It's perfect for lunchboxes, meal prep or an easy summer dinner when it's too hot to spend time cooking.
