High-Protein Veggie-Loaded Cheat Quiche

It's perfect for busy weeknights, meal prep, or a healthy work lunch. Best of all, you can use whatever vegetables you have in the fridge, making it a great way to use up leftovers.

Ingredients

  • 1 large wrap
  • 3 eggs
  • 2 heaped tbsp cottage cheese
  • 1 Large tomato or two small tomatoes, diced
  • 2 mushrooms, sliced
  • 1 green onion (scallion), finely sliced
  • ½ cup kale, chopped
  • ½ cup grated cheese of your choice (or a mix of cheeses, such as cheddar and feta)
  • Salt and freshly ground black pepper
  • A little oil, for greasing the dish

Method

  1. Preheat the oven to 160°C and lightly grease a round ovenproof baking dish with a little oil.
  2. Press the wrap into the dish, allowing it to come up the sides to form a crust.
  3. Crack the eggs directly into the wrap, add the cottage cheese, season with salt and pepper, and whisk together with a fork until combined.
  4. Scatter over the tomato, mushrooms, green onion and kale, then sprinkle with the grated cheese.
  5. Gently press the vegetables into the egg mixture so they are evenly covered.
  6. Bake for 15–20 minutes, or until the egg is set and the top is golden.
  7. Leave to cool for a few minutes before slicing.

Serve warm or cold with a fresh green salad. It's perfect for lunchboxes, meal prep or an easy summer dinner when it's too hot to spend time cooking.
