Quick creamy tomato pasta with homemade tomato sauce, made using fresh tomatoes from your Bockety Box. A simple, comforting family dinner for busy midweek evenings.
Ingredients
- 4 big tomatoes or 8 Small tomatoes
- 1 onion
- 1 carrot, diced
- 1 clove garlic, minced
- 1 tbsp tomato paste
- 1 tsp dried basil
- 300ml stock
- 200ml cream
- 2 x 500g packets tortellini, flavour of your choice
- Parmesan cheese, grated
- Salt and pepper
- Oil, for cooking
- Fresh basil, to serve (optional)
Method
- Dice the tomatoes, onion and carrot, and mince the garlic.
- Heat a little oil in a large, heavy-based pan over a medium heat. Add the onion, carrot and garlic and cook gently for 2–3 minutes until softened and fragrant, without allowing them to brown.
- Add the tomato paste and dried basil and stir through. Add the diced tomatoes, season well with salt and pepper, and mix everything together.
- Cover with a lid, reduce the heat and cook gently for 10 minutes.
- Remove the lid, pour in the stock and cook for a further 10 minutes, allowing the sauce to reduce slightly.
- Add the cream and simmer gently for 5–6 minutes. Stir through a generous handful of grated Parmesan.
- Meanwhile, cook the tortellini according to the packet instructions. Drain and add directly to the tomato sauce.
- Gently toss everything together until the tortellini is well coated in the creamy tomato sauce.
Serve immediately with extra Parmesan and some fresh basil on top, if you like.
