Back-to-School Ham, Cheese & Corn Muffins
These easy ham, cheese and corn muffins are perfect for back-to-school season. Packed with sweet corn, ham and cheese, they’re a simple savoury lunchbox idea for kids and are great for after-school snacks too. They take just 10 minutes to prepare and can be made ahead, ready to grab on busy school mornings.
Ingredients

300g self-raising flour

50g grated cheese

1 egg, beaten

250ml milk

100g butter, melted and cooled

100g ham

1 corn on the cob

Salt and pepper, optional
Method

Preheat the oven to 180°C. Line a 12-hole muffin tin with muffin cases, or grease a non-stick muffin tin well with oil.

Using a sharp knife, carefully slice the corn kernels from the cob. Cut the ham into small pieces.

Add the flour, grated cheese, ham and corn to a large bowl. Mix well and season with a little salt and pepper, if using.

In a separate bowl, whisk together the milk, beaten egg and melted, cooled butter.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing.

Divide the mixture evenly between the 12 muffin holes.

Bake for 15–17 minutes, or until golden and cooked through.

Remove from the oven and allow to cool slightly before transferring to a wire rack.
Store in an air tight container fro 2-3 days
