Crispy edges, soft in the middle, these are an easy way to level up parsnips.
Ingredients
4–5 parsnips
1½ tsp garam masala
Salt & pepper
1½ tbsp olive oil
¼ cup plain Greek yogurt
1 small garlic clove, minced (or ½ large)
Salt & pepper
1 tbsp chopped parsley (optional)
1–2 tsp hot honey (or regular honey + a pinch of chilli flakes)
Method
Peel the parsnips, wash and dry well. Cut in half lengthways, then into quarters so you have long even pieces.
In a bowl, mix the olive oil, garam masala, salt, and pepper. Add the parsnips and toss well to coat.
Place in the air fryer and cook at 190°C for 18–20 minutes, shaking halfway through, until golden, slightly crispy on the outside, and soft in the middle.
Meanwhile, mix the yogurt with the garlic, a pinch of salt and pepper, and parsley if using.
Spread the garlic yogurt onto a plate, pile the parsnips on top, and drizzle with hot honey.
